Yes – it’s true. I’ve never loved salad more! This one is so delicious and simple! Add spinach to a bowl. Chop your almonds (or leave them whole!), throw in some blueberries, raspberries, blackberries and toss. Shake up your dressing in a jar – olive oil, balsamic vinegar, honey, mustard and garlic. Pour over salad and serve!
Seriously – that’s it.
What makes this an immune boosting salad?
This salad packs a huge immune boosting punch because it’s loaded with vitamin C from the variety of berries and spinach, beta carotene from the spinach, and vitamin E from the almonds.
Ok, but what’s so special about vitamin C, and the antioxidants beta carotene and vitamin E?
People turn to vitamin C after they’ve caught a cold because it helps build up your immune system. Vitamin C is thought to increase the production of white blood cells, and white blood cells are the key to fighting infections. Beta carotene converts to vitamin A (an antioxidant) which may increase the infection-fighting ability of our immune systems as it helps the heart, lungs, kidneys, and other organs work properly. Vitamin E is another antioxidant that may help protect your cells from damage.
Meal Prep Tips for this Summer Berry Spinach Salad:
If we’re thinking meal prep-situation with this recipe – YES. Absolutely, yes. Here are my tips for that situation!
- Don’t assemble the whole salad and add the dressing if you’re using this as a meal prep lunch – it will get soggy
- Reusable glass containers like these (affiliate link) work well for prepping your ingredients! You can prep individual salads into each container – without the dressing
- Mix up your dressing and keep it in a mason jar, or reusable dressing cups (affiliate link)
- Add the dressing immediately before eating!
- If you need/want some protein for lunch (generally a good idea!) grill some chicken breast and add it to this salad. That would not be a bad idea at all
If you’re serving this for dinner/a potluck/etc. – toss all the ingredients together, and pour the dressing on just before eating! You can also just set the dressing next to the salad bowl in a little jar for people to add themselves. This salad only makes about 6 servings if you’re eating it as your main course. It serves 8 as a side. You can also double it or cut it in half depending on how many people you need to feed!

Ingredients
Balsamic Dressing:
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 1 teaspoon honey
- 1 teaspoon mustard
- 1 clove garlic, minced
- salt and ground black pepper to taste
Berry and Spinach Salad:
- 4 cups organic baby spinach
- 1 cup raspberries
- 1 cup blackberries
- 1 cup blueberries
- 1 cup almonds
Instructions
Dressing:
- Combine the olive oil, balsamic vinegar, honey, mustard, garlic, salt, and black pepper together in a glass jar with a lid. Place lid on the jar and shake vigorously until thoroughly combined.
Salad:
- Combine ingredients in a bowl and drizzle lightly with balsamic dressing.
