This my dear friends, is one of my husband’s recipes from Northern Ontario. I love his recipe, and he happened to make it this past weekend, so I asked if I could share it with you, thankfully he said yes, because you’re in for a treat with this recipe!

There is just something magical about dried beans that have been soaked overnight and then slowly simmered in a soup until they are tender, creamy and oh so good! This is pure comfort food that will fill your home with the rich smell of soup all day! In addition to the beans this soup contains onions and tomatoes and is seasoned with garlic, chili powder and of course, plenty of bacon! This soup is great either served chunky veggies in a broth or where everything is pureed into a thick and creamy soup – be sure to top it off with crispy bacon crumbles!

How to make this simple and amazingly tasty bacon and bean soup

This soup comes together is 7 simple steps:

  1. Rinse Bob’s Red Mill 13 Bean Soup Mix, then soak overnight in water to cover.
  2. The next day, drain and rinse the beans.
  3. Cook bacon, set aside to cool. (I like to cook bacon in my air fryer: 8 min at 400F).

  4. Empty can of diced tomatoes into crock pot.
  5. Add chopped onion, minced garlic, chili powder and beans to tomatoes in crock pot. Stir.
  6. Crumble bacon and add to crockpot mixture. Set 2-3 strips of bacon aside to garnish soup later.
  7. Simmer soup in crock pot on medium for 8 hours.
  8. Garnish with crumble bacon that was set aside and parsley and enjoy!
