To make this fun fruit salad you will need…

Fruit you’ll need

  • 1 Small Watermelon (Seedless)
  • 2-3 Peaches
  • 16 oz Strawberries (or 1 Clamshell)
  • 16 oz Blueberries (or 1 Clamshell)
  • 1 Mango

Other fruit that would work great in this salad include: Cherries, Cantaloupe, Pineapple, and Honeydew!

Ingredients needed for the Honey Lime Fruit Salad dressing

  • 2 ½ Tbsp Honey
  • 1 Tbsp Mint (Chopped)
  • 1 Lime

How to make the Honey Lime Fruit Salad Dressing

  1. First, make the dressing: Place the honey in a bowl. Cut the lime in half and squeeze both halves into the bowl, being careful not to get any seeds in there.

  2. Add chopped mint. Whisk until mixed well. Set aside.

How to make this fun salad

  1. Wash the  strawberries, and cut the stems off (discard). Then, chop the strawberries into smaller pieces.
  2. Add strawberries to a large bowl. 
  3. Cut the skin off of the mango and chop it into smaller chunks, place the mango chunks and the blueberries in to the bowl.
  4. Slice the watermelon from end to end so that you have big round slices. Each slice should be about an inch or so thick. Lay each slice flat.
  5. (If the slices are too thin, they may break while you’re trying to cut the stars. But if they’re too thick you may not be able to get the cookie cutter through.) 
  6. Using the star cookie cutter,  push it into the watermelon to cut out a star. Repeat until you’ve cut out as many stars as you can.

  7. Place the watermelon stars in the bowl.
  8. Next, remove the skin from the peaches and slice the peaches into ½ inch flat pieces. 
  9. Lay the pieces flat. Use the cookie cutter to cut stars out of the peach slices, the same way you did with the watermelon. 
  10. Make as many stars as you can and then place them in the bowl.

  11. Drizzle Honey Lime dressing on top of the fruit.
  12. Use a spatula to carefully mix all of the fruit around until it’s evenly coated in the dressing.
  13. Optional – Garnish with a little lime zest on top.

Fruit salad dressing tips

  • You can substitute agave nectar for the honey as well. Either will help to balance out the fruit and add a little thickness to the dressing. 
  • Likewise you could also use lemon or orange instead of the lime for that citrusy aspect!
