The onion and celery can be prepped and the sausage cooked ahead of time, so that on a busy weeknight you can dump the ingredients into a soup pot, and simmer for 15 minutes before eating. To make this Spicy Sausage Tortellini Soup you will need
- Spicy italian sausage
- Cooking onion
- Celery, diced
- Diced tomatoes
- Chicken broth, (I prefer low sodium)
- Cheese filled tortellini
- Garlic
- Oregano
- Basil
- Salt and Pepper
How to make this recipe for Italian Sausage Tortellini Soup
I love that this bowl of comfort comes together in only a few easy steps, anyone can make this!
- Bake sausages for 35 min at 350 F.
- Combine ingredients in large pot.
- Bring pot to boil.
- Simmer on med for 15 min until pasta is cooked.
How to freeze Sausage Tortellini Soup:
This soup can definitely be frozen! Keep in mind that pasta gets soft after being frozen, so if that’s not your thing then you may want to leave the pasta out until you’re ready to serve.
To freeze, simply cool to room temperature, then place in a large freezer bag or freezer container. I prefer to use freezer bags because they can be frozen flat and thaw out quickly in some lukewarm water.

- To make this Italian Sausage Tortellini Soup dairy-free, omit the cheese tortellini and substitute regular pasta, and be sure to double check all of your ingredients.

- 2 stalks celery, diced
- 1 can of diced tomatoes (28 oz)
- 1800 ml chicken broth, low sodium
- 500 grams cheese filled tortellini
- 2 garlic cloves minced
- 1 tsp oregano
- 1 tsp basil
- pepper, to taste
- salt, to taste
