This is my favourite alternative to the classic Caesar Salad that I love to eat with grilled steak, pork chops or chicken- this Roasted Asparagus Caesar Salad recipe is made with a light Greek Yogurt Caesar Dressing and is the perfect Spring salad!

Ingredients for the Caesar Salad Dressing

You can make this salad with my anchovy-free Caesar dressing, or you can top with store bought Caesar Salad dressing. Top with crunchy roasted chickpea croutons, or my homemade croutons, or store bought croutons and enjoy!

  • Mayonnaise (or Greek Yogurt)
  • Grated Parmesan cheese
  • Dijon mustard
  • Lemon
  • Garlic
  • Worcestershire sauce (leave this out for an anchovy free caesar salad dressing)
  • Kosher salt
  • Fresh cracked pepper

Roasted Caesar Asparagus 8 - This is my favourite alternative to the classic Caesar Salad that I love to eat with grilled steak, pork chops or chicken- this Roasted Asparagus Caesar Salad recipe is made with a light Greek Yogurt Caesar Dressing and is the perfect Spring salad!

How to make Roasted Asparagus Caesar Salad

This Caesar Salad alternative comes together easily in 6 easy steps!

  1. In a small bowl whisk together all of the dressing ingredients. Set aside until ready to use.
  2. Preheat the oven to 425 degrees.
  3. Trim the asparagus ends and lay them in a single layer on a baking sheet.
  4. Drizzle the asparagus with olive oil and sprinkle it with salt and pepper. 
  5. Add to the oven and roast for 7-10 minutes depending on the thickness of your asparagus spears.
  6. Remove the asparagus from the oven, drizzle with the desired amount of Caesar dressing, croutons, shaved Parmesan, and some freshly cracked black pepper. Serve!

Notes and Tips

  1. Try Greek yogurt instead of mayonnaise in the Caesar dressing recipe.
  2. There are anchovies in Worcestershire sauce, so if you would like a true “no anchovy” dressing, please omit.
  3. Want to add anchovy paste to the dressing? Start by adding 1 teaspoon.
  4. During the summer try grilling the asparagus instead of roasting. Directions: Heat grill to high. Drizzle olive oil over the asparagus and sprinkle it with salt and pepper. Grill the asparagus for 5-7 minutes until nice and charred.
