  • Boneless chicken breasts cut into bite-size pieces
  • Olive oil
  • Unsalted butter
  • Garlic
  • Onion
  • Carrots
  • Celery
  • Mushrooms
  • Dried thyme
  • Dried rosemary

  • Salt and pepper
  • All-purpose flour
  • Chicken stock
  • Bay leaf

How to make…

Step 1: In a bowl season chicken pieces with salt and pepper, to taste.

Step 2: Heat oil in a pan, add chicken pieces, and cook until golden (about 2-3 min), once done transfer the chicken onto a plate.

Step 3: In the same pan, melt butter over medium heat, add minced garlic, and sauté until garlic becomes fragrant.

Step 4: Next add onions, carrots, and celery, cook for 2-3 minutes then add mushrooms and cook for another 2 minutes, stirring occasionally.

Step 5: Add dried thyme, rosemary, oregano, chili flakes, black pepper, and salt; give it a good mix. Now, add all-purpose flour and sauté everything until the flour is lightly browned for about 1 minute.

Step 7: Add chicken stock, bay leaf, and cooked chicken pieces; let it cook for 5-6 minutes whisking continuously.

Step 8: Stir in half and half and let it cook for another 1-2 minutes. Season with extra salt and pepper if required.

Step 9: Serve immediately, garnished with chopped parsley.

Tips & Substitutions

  • Cubed chicken breasts can be substituted with shredded and cooked rotisserie chicken to save time – simply skip the first step of the recipe. You can also use canned chicken instead. 
  • Half and half is equal parts of whole milk and fresh light cream.
  • Half & half can be substituted with whole milk, but your soup will be thinner. Or, substitute with heavy cream, which will make your soup thicker.
  • Chicken broth can be substituted with vegetable broth.

Ingredients

  • 0.5 lb boneless chicken breasts cut into bite-size pieces
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 4 large garlic cloves minced
  • 1 large onion diced
  • 2 carrots diced
  • 2 stalks of celery diced
  • 1 cup mushrooms thinly sliced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 teaspoon oregano
  • 1 teaspoon chili flakes (optional)
  • 1 teaspoon black pepper powder (divided)
  • 1 teaspoon salt (divided)
