Instant Pot Chicken and Broccoli Cheesy Rice Casserole – it’s cheesy, it’s comforting and it’s made in an instant pot. It’s the perfect comfort food dinner!
I think you’ll like this “casserole.” It’s kind of an all in one meal…veggies, starch and meat all in your Instant Pot. If you are looking for a quick and easy Instant Pot meal that will please even your smallest eaters, you’ve landed on the right recipe. This one is so yummy and ridiculously simple – it’ll blow you away.
This easy and healthy chicken and broccoli is flavored with a few simple ingredients and cooked quickly in the Instant Pot. Leftovers work incredibly well for meals the following day, and the dish is easily served with brown or white rice to round out a complete meal.
I haven’t made very many Instant Pot meals yet, but I have to admit that so far this is the simplest that I’ve made, it’s one of my favorites.
Unfortunately I haven’t perfected broccoli in the Instant Pot yet (if you know how please let me know), so I steamed the broccoli in a separate pot on my stove, then added it to the casserole at the end so that the broccoli wouldn’t be too mushy.
Here’s the recipe:
- 2 Tbsp Butter
- 1½ - 2 Pounds Boneless Skinless Chicken Breast cut into cubes
- 2 Cloves Garlic
- 1 Small Onion
- 1 Tsp Salt
- 3/4 Tsp Pepper
- 1 Tsp Garlic Powder
- 1 1/3 Cups Brown Long Grain Rice
- 1 1/3 Cups Chicken Broth
- ½ Cup Milk
- 1½ Tbsp Flour
- 2 Cups Fresh Broccoli cooked
- 1 1/2 - 2 Cups Sharp Shredded Cheddar Cheese
Turn Instant Pot onto saute. Add butter and heat until hot. When hot, add chicken, onion, and garlic.
Cook chicken mixture until onion starts to get translucent. Add rice, broth and seasonings. Stir well.
Whisk together milk and flour and set aside.
Steam broccoli and set aside.
Cook on manual high pressure for 10 minutes. When the timer is up perform a quick release.
Immediately add milk and flour mixture and mix until it is well combined.
Add broccoli and cheese and stir until well combined. Serve immediately.
