This one is so yummy and ridiculously simple – it’ll blow you away.

Why You’ll Love This Instant Pot Chicken Rice and Broccoli Dish

This easy and healthy chicken and broccoli instant pot dinner is flavoured with a few simple ingredients and cooked quickly in the Instant Pot.  Leftovers work incredibly well for meals the following day, and the dish is easily served with brown or white rice to round out a complete meal.

I haven’t made very many Instant Pot meals yet, but I have to admit that so far this is the simplest that I’ve made, it’s one of my favorites.

Unfortunately I haven’t perfected broccoli in the Instant Pot yet (if you know how please let me know), so I steamed the broccoli in a separate pot on my stove, then added it to the casserole at the end so that the broccoli wouldn’t be too mushy.

Ingredients you’ll need to make Instant Pot Chicken Rice and Broccoli

  • Butter
  • Boneless Skinless Chicken Breasts
  • Garlic
  • Onion
  • Salt & Pepper
  • Garlic Powder
  • Brown Long Grain Rice (Minute Rice), I used the kind that cooks in 10 minutes
  • Chicken Broth
  • Milk
  • Flour
  • Fresh Broccoli
  • Sharp Shredded White Cheddar Cheese

How to make Instant Pot Chicken Rice and Broccoli

  1. Turn Instant Pot onto saute Add butter and heat until hot. When hot, add chicken, onion, and garlic.
  2. Cook chicken mixture until onion starts to get translucent. Add rice, broth and seasonings. Stir well.
  3. Cook on manual high pressure for 10 minutes. When the timer is up perform a quick release.
  4. While the rice and chicken are in being pressure cooked in the instant pot, whisk together milk and flour and set aside.
  5. Also while the rice and chicken are in being pressure cooked in the instant pot, steam broccoli using a steamer and a pot on your stove and set aside.
  6. After performing the quick release on the instant pot for the chicken and rice, immediately add milk and flour mixture to the instant pot and mix until it is well combined.
  7. Add broccoli and cheese and stir until well combined. Serve immediately.

Ingredients

  • 2 Tbsp Butter
  • 1½ - 2 Pounds Boneless Skinless Chicken Breast cut into cubes
  • 2 Cloves Garlic
  • 1 Small Onion
  • 1 Tsp Salt
  • 3/4 Tsp Pepper
  • 1 Tsp Garlic Powder
  • 1 1/3 Cups Brown Long Grain Rice (Minute Rice), I used the kind that cooks in 10 minutes
  • 1 1/3 Cups Chicken Broth
  • ½ Cup Milk
  • 1½ Tbsp Flour
  • 2 Cups Fresh Broccoli cooked
  • 1 1/2 - 2 Cups Sharp Shredded White Cheddar Cheese

Instructions

Notes

If using frozen broccoli florets, put them in a colander and run hot water over them for a couple minutes. Shake off the excess water and stir them into the rice. If using fresh broccoli florets you can do one of two things. First and faster idea is to put the florets in a glass bowl with a quarter cup of water and put them in the microwave for 4-5 minutes, until the broccoli is steamed and reaches your desired cooked consistency. Second idea is you add the fresh broccoli to the pot after the pressure has released and then put the lid back on and let the broccoli cook for about 20 minutes.

    I’m excited to try this recipe! But I’m a little confused on the direction 😕 So you sauté the chicken. Then do you take the chicken out so you can steam the broccoli? Or do you leave the chicken in? It says to set aside the broccoli and then it says to cook for 10 more minutes. So are we cooking the chicken again? I really want to make this tonight but not sure what to do. I’m new to using an instant pot so I don’t want to mess it up! Please help!

      I steamed the broccoli completely separate on my stove and added it to the rice & chicken as the very last step after all the instant pot cooking. After sautéing the chicken, cook chicken & rice in instant pot for 10 minutes. I’ve updated the recipe to try and make the directions more clear, let me know how it turns out!

        I followed the directions but my rice wasn’t cooked after 10 minutes. It was still quite north of al dente. I have the 6qt Instant Pot. Should I have put it on the RICE mode instead of PRESSURE COOKER?

      To cook broccoli in IP, add cup water, put broccoli florets (roughly same size, but not too small) on trivet or in a steamer basket, set Pressure to O mins When time is up, release pressure immediately and remove broccoli and set aside and add to chicken/rice a few mins before serving to warm it up.
