  4. Drizzle ½ Tbsp olive oil onto the sweet potatoes and mix.
  5. Drizzle the other ½ Tbsp onto the chickpeas and well as the garlic powder and paprika. Mix. Bake for 20 minutes.
  6. Meanwhile, make the dressing. Combine olive oil, tahini, lemon juice and maple syrup to a small bowl. Mix until a thick paste is formed.
  7. Add water to thin out (more if needed). The dressing should be smooth, a lighter color than the paste and a thin liquid.
  8. Assemble the salad and enjoy!
