A fresh summer salad combining spring greens, strawberries, crumbled feta, mint, red onion, and walnuts, dressed with a homemade white balsamic vinaigrette made from olive oil, honey, garlic, and shallot. The salad is vegetarian and gluten-free, and can be made vegan by omitting the feta and honey.
This no-cook recipe requires only blending the dressing ingredients and assembling the salad. Leftover dressing keeps refrigerated for up to one week. The salad works as a light lunch or barbecue side dish and can be paired with grilled chicken for a more substantial meal.

What is the difference between balsamic vinegar and white balsamic?
While the traditional balsamic vinegar is cooked and concentrated to produce a rich flavor with a deep and dark color, the white balsamic vinegar is cooked at high pressure to prevent caramelization, giving it a golden color and a gentler flavour.
Substitutions

- 1 cup of chopped walnuts
