Mixed Berry Vinaigrette Salad Dressing Recipe

I had so much fun sharing my random thoughts with you all last week that I’m participating again in Running with SpoonsThinking Out Loud Thursday again.  Here are a few of the thoughts that popped into my head this week:

Random thought #1:

Did you know that I started running fourteen years ago?  I got this crazy idea in my head that I wanted to try running a half marathon. Only I had no idea how to train for one, nor did I understand how far a half marathon was.  I grabbed a book that I found at the Running Room (and apparently a tank top too) and followed a 16 week training program from the book.  I trained only on a dreadmill and discovered fairly early in the race that dreadmill running and road running are very different. Road running is physically harder, while the dreadmill is mentally harder.

Random thought #2:

Cuddles always win.  I set my alarm to get up early for my run, but got caught trying to sneak out by my youngest daughter, so I decided to stay and cuddle with her until the rest of the family wakes up. I managed to fit my run in later at lunch.

Life is too short to say no to this.

Random thought #3:

Making your own salad dressing is so much easier than I ever thought. The other day I decided to try making my own salad dressing and was surprised at how easy it was.

Homemade Mixed Berry Vinaigrette Salad Dressing

I eat a lot of salad, but had never thought to make my dressing myself.  Why would I when there are so many great options at the store?  I was out of dressing for my salad, and wasn’t in the mood to herd the cats to go to shopping, so I looked through my cupboards and found everything I needed:

Ingredients:

  • 2 cups of Olive Oil
  • 1 cup of Apple Cider Vinegar
  • 2 cloves of Garlic, minced
  • 1/4 to 1/2 cup of Liquid Honey
  • 1  cup of Mixed Berries (I used frozen berries)

 Here’s What You Do:

Throw everything in a blender and blend for 60 sec.

It really is that simple to make your own delicious and fresh berry vinaigrette. 

Random thought #4:

Salads made with home-made salad dressing taste way better. This thought is self-explanatory, but if you don’t believe me, here’s a picture:

    Oh gosh, I am so random thoughts pop in and out all the time. Especially on runs.

    I love making my own salad dressings, they are surprisingly easy. However, I do still sometimes reach for the convenient bottles.
    I love that picture, that girl looks so happy! Now days thats probably you smiling in someone else’s picture while they are miserable.

    Oh my goodness. I always have random thoughts (and amazing blog posts that I ultimately FORGET the moment I come in the door) when I am out and about… or running! Always running! 😉
