I had so much fun sharing my random thoughts with you all last week that I’m participating again in Running with SpoonsThinking Out Loud Thursday again.  Here are a few of the thoughts that popped into my head this week:

Random thought #1:

Did you know that I started running eighteen years ago?  I got this crazy idea in my head that I wanted to try running a half marathon. Only I had no idea how to train for one, nor did I understand how far a half marathon was.  I grabbed a book that I found at the Running Room (and apparently a tank top too) and followed a 16 week training program from the book.  I trained only on a dreadmill and discovered fairly early in the race that dreadmill running and road running are very different. Road running is physically harder, while the dreadmill is mentally harder.

Random thought #2:

Cuddles always win.  I set my alarm to get up early for my run, but got caught trying to sneak out by my youngest daughter, so I decided to stay and cuddle with her until the rest of the family wakes up. I managed to fit my run in later at lunch.

Random thought #3:

Making your own salad dressing is so much easier than I ever thought. The other day I decided to try making my own salad dressing and was surprised at how easy it was.

I eat a lot of salad, but had never thought to make my dressing myself.  Why would I when there are so many great options at the store?  I was out of dressing for my salad, and wasn’t in the mood to herd the cats to go shopping, so I looked through my cupboards and found everything I needed:

It really is that simple to make your own delicious and fresh mixed berry vinaigrette. 

Random thought #4:

Salads made with home-made salad dressing taste way better. This thought is self-explanatory, but if you don’t believe me, here’s a picture:

As mentioned above, there is no doubt I LOVE a good salad. It’s probably one of my favorite things to make and eat. I think it’s because salads don’t require much, just bright greens, fresh veggies or fruit, and a good homemade dressing.

Usually, vinaigrette type dressings with oil and vinegar tend to be healthier. To keep the vinaigrette refined sugar-free, honey is used instead of brown sugar.

What ingredients are in Berry Vinaigrette?

This berry salad dressing is made with ingredients that you likely already have available to you at home:

  • Olive Oil
  • Apple Cider Vinegar (or Raspberry vinegar)
  • Garlic, minced
  • Liquid Honey
  • Frozen Mixed Berries

How to make berry vinaigrette

There’s only one step for this berry vinaigrette recipe: Throw everything in a blender and blend for 60 seconds. It’s really easy to make a homemade berry salad dressing!

How to store triple berry vinaigrette

This vinaigrette can be stored in the refrigerator in a jar or other container with a tight lid so that it’s easy to shake it up again when you need it.

  • 2 cups Olive Oil
  • 1 cup Apple Cider Vinegar
  • 2 cloves Garlic (minced)
  • 1/4 to 1/2 cup Liquid Honey
  • 1 cup Frozen Mixed Berries

Instructions

  • Throw everything in a blender and blend for 60 sec.

  1. This is delicious! But it solidified after being in the fridge over night. How can I keep it liquid?

    1. Thank you! And thank you for asking this question.

      The extra-virgin olive oil in this recipe naturally hardens in the cold, so you won’t be able to keep it liquid unless you make this recipe with a different oil, such as canola, avocado, or grapeseed instead.

      To turn the dressing back to a liquid, you can warm up the dressing:

      • Your first choice: warm your dressing slightly by taking it out of the fridge 30-60 minutes before serving so the oil warms up to room temperature.
      • Your second choice: Place your dressing container into a warm water bath. You are not trying to ‘cook’ or make it ‘hot’ just warm enough to thin it out without actually changing the flavor profile.

        If neither of those work for you then you might consider adding a bit of water, 1 tsp at a time.

  8. I love making my own salad dressings, they are surprisingly easy. However, I do still sometimes reach for the convenient bottles.
    I love that picture, that girl looks so happy! Now days thats probably you smiling in someone else’s picture while they are miserable.
