Happy Monday night guys!

I’m in the midst of a 4 day solo parenting gig so yesterday I was in full-on meal prep mode. The girls are bored of the lunches we pack them for summer day camp so we decided to explore two new food options for them.  We decided that for this week we’ll try spanish rice wraps and spinach and cheese omelettes…. Oh and the girls also wanted to learn how to make them so we made these together.  Both of these are REALLY easy to make.

Spinach and cheese omelettes - fun to make with your kids!

Since Amber doesn’t like to eat eggs (and REFUSES to even try anything that has eggs in them), I sent the quiches in Sierra and Brooke’s lunches. For Amber, I put the spanish rice in a wrap with a bit salsa, lettuce and cheese. Sierra and Brooke ate all three of their quiches, and Amber ate 3/4 of her wrap. She says she liked her wrap but was afraid to eat the bottom because her counsellors said they had to clean up any mess they made. 🙂

Progress Update

In March of this year I noticed my clothes were getting rather tight so I put batteries back into my Fitbit scale. Ugh! Since then I’ve been making gradual adjustments to my fitness routine and nutrition, like adding in strength training and trying to drink less alcohol, eat less chips and eat more salads. For the first three months I stopped the upward weight creep, and managed to hold it steady. Then in June I finally started seeing progress. Incidentally that’s when I started running 3 times a week and doing some strength training on my lunches. Since June I’ve lost 5lbs which is about 1/2 a lb a week. I was starting to get REALLY frustrated until I saw this chart in the fitbit app:

That looks like progress to me!!

I’m so excited! My goal is to get back to my post-ironman 70.3 weight by Christmas. It would be VERY nice to fit back into ALL of my clothes. Losing weight in my 40’s sure is a lot more challenging than it was even 5 years ago. Sigh.

Last week’s fitness:

Monday: Ran + coached Brooke’s softball game
Tuesday: Rest
Wednesday: Bodyweight strength park workout + coached Brooke’s softball game
Thur: Upper body weights at lunch at GoodLife Fitness
Friday: Ran before work
Saturday: Ran + kettlebell workout before volunteering at a softball tournament
Sunday: Rest/gardening & mowed the lawn, went skating with the girls

Here’s this week’s plan:

Monday: Rest + coaching Brooke’s softball practice
Tuesday: Kettlebell workout
Wednesday: Bodyweight strength workout + coaching Brooke’s softball game
Thur: Upper body weights at lunch at GoodLife Fitness
Friday: 8k morning run + lower body weights at lunch at GoodLife Fitness
Saturday: Rest (Brooke’s softball tourney)
Sunday: Run or Kettlebell workout

And here’s a quick run down of what we did this past weekend:

(I’m making it quick because this solo parenting thing has left me EXHAUSTED! I thought this would get easier as they got older but nope, I’m just as tired).

Friday night, Brooke had a softball practice, while Sierra, Amber and I stayed home to swim.  Saturday I ran 10k, swung the kettlebell around, then worked the BBQ at a softball tournament.  Afterwards I took the girls back-to-school shopping for new shoes, then we went a saw the movie The Secret life of Pets (so cute!). On Sunday I cleaned up my garden, mowed the lawn, took the girls ice skating, went grocery shopping, meal prepped, washed 4 loads of laundry, cleaned the house….  All in all not an overly exciting weekend but it was nice to have a break from sitting at a softball diamond all weekend.  Next weekend is our LAST weekend of softball tournaments!

Mini Spinach and Cheese Quiche

These Mini Spinach and Cheese Quiche are so easy thanks to store-bought pie crust. Make them in advance and keep them in the freezer. Great for parties, brunch and kids lunches!

cook: 30 minutes
Total: 35 minutes

Ingredients 

  • 3/4 cup spinach dip
  • 5 eggs
  • 1 1/2 cups shredded cheddar cheese
  • 12 frozen tart shells

Instructions

  • In a bowl mix eggs, spinach dip and 3/4 cup cheese.
  • Pour mixture into tart shells. Sprinkle with remaining cheese.
  • Bake at 350 for 30 min.

Notes

HOW DO YOU FREEZE MINI QUICHE?
  1. Follow the recipe and bake the mini quiches. Cool 10 minutes.
  2. Freeze individually on a plate or baking sheet until they are solid (about 30 minutes).
  3. Transfer them to a freezer-safe bag.
  4. Bake them straight from the freezer, in a 400-degree oven, for 5 to 10 minutes.
