  1. Combine dry ingredients together in a medium bowl: flour, cream of tartar, baking soda, cinnamon, and salt.
  2. Mix in a large bowl: Start by mixing the butter and sugar together, I like to use a hand mixer to do this until the butter/sugar mixture is smooth and creamy. Then slowly mix in the egg, egg yolk and vanilla extract. Slowly add the dry ingredients to the wet ingredients scraping the sides of the bowl as you go. The dough will thicken as you go.
  3. Prepare cookie topping: Combine the granulated sugar and cinnamon together in a small bowl.
  4. Scoop and Roll: Using a 1.5 Tablespoon cookie scoop, scoop cookie dough and roll in cookie topping.
  5. Arrange and Bake: Arrange snickerdoodle cookie dough balls 3 inches apart on the baking sheets and bake at 375 degrees F for 10 minutes. The cookies will become soft and puffy. Remove cookie tray from oven and lightly press down on them with the back of a spoon or fork to help flatten them out, then allow cookies to cool on the baking sheet for 10 minutes . Once the cookies have cooled on baking sheet for 10 minutes, transfer cookies to a wire cooling rack to cool completely.
