Something about the holidays makes me want to be all fancy. If you know me in real life and not just because you hang out with me on the internet, then you know I am probably the least fancy of all the people.

If it weren’t for work I would wear pajamas literally round the clock.  90 percent of the weekend you can find me in leggings or athleisure.

That said Christmas parties are the perfect opportunity to dress up during the holiday season. The holidays are all about sparkle!

And this holiday goat cheese flatbread with maple roasted cranberries and thyme is sparkly and dressed up. Something about the blend of ingredients and the pretty little cranberries just screams December to me. And the thyme reminds me of little Christmas trees. Plus the smell piney and just absolutely delicious. Mmmm.

The great thing about this appetizer besides well everything is that it looks fabulous and fancy but in real life it’s low maintenance. Just like me at the holidays. I only LOOK all fancy but so low maintenance.

I mean this holiday goat cheese flatbread is so easy. You just mix cranberries, maple syrup, shallot, thyme and salt in an 8×8 inch baking dish. Roast, stirring once or twice, for 15 minutes. Set aside. Then brush the flatbread crust with olive oil and season with salt, pepper, and thyme. Spread the hot cranberry mixture over the flatbreads. Top with the goat cheese and pop it back into the oven to melt the cheese.

Ingredients 

  • 1 ½ cup fresh cranberries
  • 3 Tbsp pure maple syrup
  • 1 Tbsp finely chopped shallot
  • ½ tsp chopped dry thyme
  • ½ tsp olive oil
  • ¼ tsp salt
  • 2 flatbreads (14.1 ounce package)
  • 1 4- ounce package fresh goat cheese (crumbled)

Instructions

  • Preheat oven to 375 degrees F.
  • Mix cranberries, maple syrup, shallot, thyme and salt in an 8×8 inch baking dish. Roast, stirring once or twice, for 15 minutes. Set aside.
  • Lay flatbreads out on work surface. Brush the crust with olive oil and season with salt, pepper, and rosemary.Spread the hot cranberry mixture over the flatbreads. Top with the goat cheese. Bake directly on the oven rack until the cheese is softened and flatbread is crispy, 8 to 10 minutes. Cut into 8 small wedges or strips and serve.
