Ingredients for vegan chocolate protein pudding: Silken tofu, semi sweet chocolate chips, cocoa powder, coconut cream, maple syrup, instant coffee, salt.

How to make chocolate tofu pudding

Using your microwave or the double-boiler method on your stove, melt the chocolate chips. Set aside.

In a blender or food processor, add all your other ingredients.

Then pour the melted chocolate in.

Blend until very smooth, scraping down the sides if necessary and adding a splash of plant-based milk if your machine has trouble blending.

Portion the pudding out into cups or jars and enjoy right away or chill for an hour or more before enjoying. The pudding will thicken up as it chills and will develop a nice thick mousse texture.

Protein pudding tastes best when it’s freshly made, so I do recommend making these the day of if possible. If you would like to meal prep them, these last 3 days in the fridge. Just grab one when you’re ready to serve, and add the toppings!
