Several years ago my middle daughter Brooke asked me to throw a Hawaiian Luau party for her so I was faced with a challenge… What do I feed our guests? I quizzed everyone I knew and came up with: Pulled Pork sandwiches, grilled pineapple, and tortilla chips served with my fresh yummy mango salsa.
Truthfully, mango salsa is one of those recipes that I go to when I want to impress my friends and family without too much effort if you know what I mean… It’s so easy to whip up and tastes so fresh and unique with the whole sweet and savoury combo that everyone loves. They also think I’m super fancy for making it for them so lets keep this our little secret!

The jalapeño is optional although I highly suggest it even if you don’t love the heat you can still add in a little and it wont be crazy hot because you have the sweet mango to balance it out. I even love making this recipe as a side to compliment grilled fish like salmon steak (new favourite) … it tastes incredible together!

- 1 Mango, peeled, seeded, and diced
- 1 Tomato, seeded and diced
- 1 Red onion, finely sliced
- 1/4 cup Lime juice
- 3 tbsp Cilantro, finely diced
- 1/4 Jalapeno pepper, minced
- Combine all ingredients in bowl, refrigerate.
(Can be made 3 hours ahead.)
Bring on the guacamole and salsa’s…. I’m in chip dipping heaven!
