For the salad:

  • ½ 16 ounce package bow tie pasta, cooked according to the package directions
  • ½ English cucumber (halved and sliced)
  • 1 red bell pepper (seeded and diced)
  • ½ red onion (diced)
  • 2 roma tomatoes (diced)
  • 1 cup shredded carrots
  • 1 6 ounce bag baby spinach
  • 1 11 ounce can mandarin oranges, drained
  • 2 cups cooked chicken (diced or shredded)
  • ½ cup sliced and toasted almonds

For the dressing:

  • cup rice vinegar
  • ¼ cup orange juice
  • ¼ cup olive oil
  • 1 teaspoon sesame oil
  • 1 teaspoon minced ginger
  • 1 teaspoon sugar
  • 1 1 ounce packet onion soup mix
  • 1 clove garlic (minced)

Instructions
