Tonight’s easy peasy dinner: Greek Quinoa Salad

This Greek Quinoa Salad has all the same flavors as a traditional Greek Salad, but I added quinoa. I love the texture and heartiness the quinoa adds. It is great served alongside grilled vegetables, chicken, or fish, or can be enjoyed on its own.

 

When I got home from work tonight I wanted something quick and easy to make, but I also wanted it to be healthy.  My daughters were asking for Mac N Cheese with hot dogs, but oh my… yuck!!  I hunted around the kitchen and found a bag of quinoa, some produce in the fridge, and a bottle of Kraft Greek with Feta Salad Dressing.  Perfect – I have everything I need to make a nutritious dinner!

This is actually one of my favourite go to meals because I can whip this up in about 15 min or less (I’ve never actually timed it).  It’s filling and more importantly, the kids will eat it!

Easy Peasy Greek Quinoa Salad

This Greek Quinoa Salad has all the same flavors as a traditional Greek Salad, but I added quinoa. I love the texture and heartiness the quinoa adds. It is great served alongside grilled vegetables, chicken, or fish, or can be enjoyed on its own.

Ingredients

  • 2 cups water
  • 1 cup quinoa
  • 1/2  red pepper, chopped
  • 1/2 yellow pepper, chopped
  • 1/2  english cucumber, chopped
  • 1/2 red onion, chopped
  • 1 cup grape tomatoes, halved
  • 1/2 cup Greek salad dressing (store-bought or make your own)
  • 1/3 cup pitted kalamata olives, halved (optional)

Cooking Directions

Bring 2 cups of water to a boil, add 1 cup of quinoa, reduce heat and simmer for 7-10 min. Once cooked add in whatever chopped veggies you want, I added: red pepper, yellow pepper, cucumber and grape tomatoes (some other suggestions are olives and red onion), then squeeze in some greek salad dressing. Mix & enjoy!

    As I get back into training I nee to find a way to get more grains and carbs while being gluten free, I really need to try some of these quinoa dishes.
